Pumpkin Cookies

Ok, so they aren't cookies :-)
Pumpkin Waffles
2 cup flour
2 tbl sugar
4 tsp baking powder
3/4 tsp salt
1/2 tsp coriander
1 tbl cinnamon
1/2 tsp nutmeg or mace
1 1/2 cup milk
1 cup canned pumpkin puree
4 x egg yolks
3/4 cup butter melted
1 tbl vanilla
4 x egg whites
Heat a well-greased waffle iron. In large bowl, sift together dry ingredients. In medium bowl, combine milk, pumpkin, egg yolks, butter and vanilla. Pour liquid mixture into dry ingredients and stir just until blended. Beat egg whites until stiff and fold into batter.
Cook in waffle iron until waffles are crispy and brown and come easily away from the iron. Waffles can be kept warm in a 200-degree oven while the rest are being prepared. Serve with warm maple syrup or warmed homemade applesauce.
Makes four servings.
