Garlic is a wonderful herb! It ranges from a good luck charm to a protector against evil or vampires! However, no matter how you view it, it will definitely transform a bland casserole - or any meal for that matter - into a venturous, aromatic and healthy culinary dish!
Garlic of course is available in many forms - whether you prefer fresh, dried or powdered - you can easily find it year round in your local supermarket.
The head... or bulb usually is about 2-3 inches in height and contains from 4 to 16 'cloves' within the head. The whole herb is enveloped in a thin paper-like covering that is easily removed.
After removing the outer covering the hard cloves can easily be crushed or cut and once that is done - wow - there is no other herb that is so easily identifiable!
Garlic - An ancient healing herb:
This ancient herb has more going for it than its unmatched flavor. It is an effective infection fighter, and it even discourages irritating and potentially dangerous mosquitoes and ticks. It is a painkiller, it stimulates the immune system, and it is helpful for treating asthma, diabetes, and high blood pressure. According to Dr. Rex Russell, "Population studies indicate an inverse relationship between the amount of garlic consumed and the number of cancer deaths in a given population!"

Roasted Garlic
One of the simplest ways to enjoy garlic is to roast it. Milder than its raw form, roasted garlic imparts a buttery and mellow flavor that can easily be spread onto bread or vegetables or used in sauces. Just slice the top off a whole bulb of garlic, set in a baking pan, and sprinkle with oil. Bake for an hour.
